Ingredients
-
1 lb (450g) boneless, skinless chicken breasts, diced
-
1 tbsp olive oil
-
Salt & black pepper, to taste
-
3 cloves garlic, minced
-
1 tsp Italian seasoning
-
1 (16 oz) package potato gnocchi (shelf-stable or refrigerated)
-
1 ½ cups chicken broth
-
½ cup heavy cream
-
1 tbsp lemon zest
-
2 tbsp fresh lemon juice
-
½ cup grated Parmesan cheese
-
2 cups baby spinach
-
Fresh parsley or basil, for garnish (optional)
Instructions
-
Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through (about 5–6 minutes). Remove and set aside.
-
Sauté aromatics: In the same skillet, add garlic and Italian seasoning. Sauté for 1 minute until fragrant.
-
Cook the gnocchi: Add the gnocchi and chicken broth. Bring to a simmer and cook for 4–5 minutes until gnocchi is tender.
-
Make it creamy: Stir in heavy cream, lemon zest, and lemon juice. Add cooked chicken back to the pan.
-
Finish it off: Add spinach and Parmesan cheese, stirring until wilted and creamy. Adjust seasoning as needed.
-
Serve: Garnish with fresh herbs if desired and serve warm!
Notes
-
Use rotisserie chicken to save even more time.
-
Want extra veggies? Add peas, asparagus, or mushrooms.
-
For a dairy-free version, use coconut cream and skip the Parmesan.
