  • 1 lb (450g) boneless, skinless chicken breasts, diced

  • 1 tbsp olive oil

  • Salt & black pepper, to taste

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • 1 (16 oz) package potato gnocchi (shelf-stable or refrigerated)

  • 1 ½ cups chicken broth

  • ½ cup heavy cream

  • 1 tbsp lemon zest

  • 2 tbsp fresh lemon juice

  • ½ cup grated Parmesan cheese

  • 2 cups baby spinach

  • Fresh parsley or basil, for garnish (optional)


Instructions

  1. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through (about 5–6 minutes). Remove and set aside.

  2. Sauté aromatics: In the same skillet, add garlic and Italian seasoning. Sauté for 1 minute until fragrant.

  3. Cook the gnocchi: Add the gnocchi and chicken broth. Bring to a simmer and cook for 4–5 minutes until gnocchi is tender.

  4. Make it creamy: Stir in heavy cream, lemon zest, and lemon juice. Add cooked chicken back to the pan.

  5. Finish it off: Add spinach and Parmesan cheese, stirring until wilted and creamy. Adjust seasoning as needed.

  6. Serve: Garnish with fresh herbs if desired and serve warm!
