Ingredients

4 boneless, skinless chicken thighs or breasts

1 tsp paprika

1/2 tsp garlic powder

Salt & black pepper, to taste

2 tbsp olive oil

2 cups baby potatoes, halved

1 cup carrots, sliced

1 cup broccoli florets

1/2 onion, sliced

2 garlic cloves, minced

1/2 cup chicken broth
-
1 tbsp lemon juice (optional)

Fresh parsley, chopped (for garnish)
Instructions

Season the Chicken: Rub chicken with paprika, garlic powder, salt, and pepper.

Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.

Cook the Vegetables: In the same skillet, add onions, potatoes, and carrots. Cook for 5 minutes, stirring occasionally. Add garlic and cook 1 more minute.

Simmer: Pour in chicken broth and return the chicken to the skillet. Cover and cook for 10 minutes.

Add Broccoli: Stir in broccoli and cook uncovered for another 5 minutes until veggies are tender and chicken is fully cooked.

Drizzle with lemon juice (optional) and garnish with parsley before serving.
