Ingredients

  • 4 boneless, skinless chicken thighs or breasts

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • Salt & black pepper, to taste

  • 2 tbsp olive oil

  • 2 cups baby potatoes, halved

  • 1 cup carrots, sliced

  • 1 cup broccoli florets

  • 1/2 onion, sliced

  • 2 garlic cloves, minced

  • 1/2 cup chicken broth

  • 1 tbsp lemon juice (optional)

  • Fresh parsley, chopped (for garnish)


Instructions

  • Season the Chicken: Rub chicken with paprika, garlic powder, salt, and pepper.

  • Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.

  • Cook the Vegetables: In the same skillet, add onions, potatoes, and carrots. Cook for 5 minutes, stirring occasionally. Add garlic and cook 1 more minute.

  • Simmer: Pour in chicken broth and return the chicken to the skillet. Cover and cook for 10 minutes.

  • Add Broccoli: Stir in broccoli and cook uncovered for another 5 minutes until veggies are tender and chicken is fully cooked.

  • Drizzle with lemon juice (optional) and garnish with parsley before serving.

Notes

  • Use any mix of seasonal vegetables you love.

  • For extra flavor, sprinkle with grated Parmesan before serving.
