Peruvian Chicken with Green Sauce (Aji Verde) Recipe
This Peruvian Chicken with Green Sauce, also known as Pollo a la Brasa with Aji Verde, is packed with bold flavors. The juicy roasted chicken is paired with a spicy, tangy green sauce made from cilantro, jalapeños, and other zesty ingredients. It’s a delicious and vibrant dish that will transport your taste buds to Peru!

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp ground cumin

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp fresh lime juice

For the Aji Verde Sauce:

  • 1 cup fresh cilantro

  • 1 jalapeño (seeds removed for less heat, if desired)

  • 1/4 cup mayonnaise

  • 2 tbsp sour cream or Greek yogurt

  • 2 tbsp fresh lime juice

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a small bowl, mix together olive oil, paprika, cumin, garlic powder, lime juice, salt, and pepper. Rub the mixture onto the chicken breasts, ensuring they are well-coated. Let it marinate for at least 30 minutes (or up to 2 hours) in the fridge.

  2. Cook the chicken: Preheat the grill or a grill pan over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F or 74°C). Alternatively, bake the chicken in a preheated oven at 375°F (190°C) for 25-30 minutes, depending on thickness.

  3. Make the Aji Verde Sauce: In a blender or food processor, combine cilantro, jalapeño, mayonnaise, sour cream (or Greek yogurt), lime juice, garlic, olive oil, salt, and pepper. Blend until smooth.

  4. Serve: Plate the chicken and drizzle the Aji Verde sauce generously over the top. Serve with your favorite sides, like rice, salad, or roasted vegetables.

Notes

  • The Aji Verde sauce can be made ahead of time and stored in the fridge for up to 3 days.

  • For extra heat, keep the seeds in the jalapeño or add a bit of hot sauce to the green sauce.

  • Pair this dish with Peruvian-style sides like Papa a la Huancaína (potatoes with cheese sauce) or corn salad for a complete meal.
