Rattlesnake Pasta is a creamy, spicy, and indulgent dish that combines tender pasta with a rich, zesty sauce, and juicy chicken or shrimp. Infused with a kick of spice from jalapeños and a creamy texture, it’s the perfect comfort food with a bit of heat!


Ingredients

  • 8 oz fettuccine or penne pasta

  • 1 lb chicken breast or shrimp, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 23 jalapeños, sliced (adjust to spice preference)

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 teaspoon paprika

  • ½ teaspoon cayenne pepper (optional for extra heat)

  • 1 cup grated Parmesan cheese

  • Salt & black pepper, to taste

  • Fresh cilantro or parsley, for garnish


Instructions

  • Cook the Pasta:

    • Cook the pasta according to the package instructions. Drain and set aside.

  • Cook the Chicken/Shrimp:

    • In a large skillet, heat olive oil over medium-high heat.

    • Add chicken or shrimp and season with salt, pepper, and paprika. Cook until browned and cooked through, then set aside.

  • Prepare the Sauce:

    • In the same skillet, add butter and sauté the onion and garlic until softened.

    • Add the jalapeños, and cook for another minute.

    • Pour in the heavy cream and chicken broth, stirring to combine.

    • Bring to a simmer and let cook for 3-4 minutes, allowing the sauce to thicken slightly.

  • Combine Pasta & Sauce:

    • Stir in the Parmesan cheese, and season with salt, pepper, and cayenne pepper (if using).

    • Add the cooked pasta and chicken or shrimp, tossing to coat everything in the creamy sauce.

  • Serve & Garnish:

    • Serve the pasta in bowls, and garnish with fresh cilantro or parsley.

Notes

  • For a spicier kick, use fresh chili peppers instead of jalapeños.

  • Swap chicken for bacon or sausage for a different flavor profile.

  • Add some sautéed vegetables like bell peppers or spinach for extra texture.
