- Prepare the Oven:
- Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- Make the Cake Batter:

- In a separate bowl, beat the eggs and granulated sugar on high speed for 3-5 minutes, until pale and fluffy.
- Add the oil, vanilla extract, buttermilk, and red food coloring to the egg mixture. Mix until combined.
- Gently fold the dry ingredients into the wet ingredients until just incorporated. Do not overmix.
- Bake the Cake:
- Pour the batter into the prepared jelly roll pan, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- Roll the Cake:
- While the cake is still warm, carefully invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper.
- Roll the cake up gently, starting from the short end, with the towel inside. Let it cool completely while rolled.

- In a bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fluffy and creamy.

- Carefully unroll the cooled cake. Spread the cream cheese filling evenly over the surface, leaving a 1/2-inch border.
- Roll the cake back up tightly (without the towel) and place seam-side down on a platter. Chill in the refrigerator for 1-2 hours.
