  • 4 boneless, skinless chicken breasts

  • 1 cup baby spinach (fresh)

  • ½ cup roasted red peppers, sliced

  • 1 cup shredded or sliced mozzarella cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Toothpicks or kitchen twine (for securing)


Instructions

  • Preheat oven to 375°F (190°C).

  • Butterfly each chicken breast (slice horizontally, not all the way through) and open like a book.

  • Season inside and out with salt, pepper, garlic powder, and Italian seasoning.

  • Stuff each breast with spinach, roasted red peppers, and mozzarella. Secure with toothpicks.

  • Heat olive oil in a skillet over medium-high heat. Sear the chicken on both sides until golden (about 2–3 minutes per side).

  • Transfer to a baking dish and bake for 20–25 minutes, or until chicken is cooked through (internal temp: 165°F / 74°C).

  • Let rest for 5 minutes, remove toothpicks, and serve.
