Ingredients

4 boneless, skinless chicken breasts

1 cup baby spinach (fresh)

½ cup roasted red peppers, sliced

1 cup shredded or sliced mozzarella cheese

1 tsp Italian seasoning

1 tbsp olive oil

Salt and pepper, to taste

Toothpicks or kitchen twine (for securing)
Instructions

Preheat oven to 375°F (190°C).

Butterfly each chicken breast (slice horizontally, not all the way through) and open like a book.

Season inside and out with salt, pepper, garlic powder, and Italian seasoning.

Stuff each breast with spinach, roasted red peppers, and mozzarella. Secure with toothpicks.

Heat olive oil in a skillet over medium-high heat. Sear the chicken on both sides until golden (about 2–3 minutes per side).

Transfer to a baking dish and bake for 20–25 minutes, or until chicken is cooked through (internal temp: 165°F / 74°C).

Let rest for 5 minutes, remove toothpicks, and serve.
