- 4 slices of bread (thick-cut, preferably day-old)
- 2 large eggs
- 1/2 cup milk

- Powdered sugar (for dusting, optional)
Instructions
- Cook the sausage: In a skillet, cook the sausage links over medium heat until browned and fully cooked, about 8-10 minutes. Set aside to cool slightly.
- Prepare the bread: While the sausage is cooking, flatten each slice of bread using a rolling pin. Remove the sausage casing, and place one sausage link on each slice of bread. Roll up tightly.
- Make the French toast batter: In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
- Coat and cook: Dip each sausage roll-up in the egg mixture, ensuring it’s fully coated. Heat butter in a skillet over medium heat. Cook the roll-ups, turning occasionally, until golden brown on all sides (about 3-4 minutes).
- Serve: Drizzle with maple syrup and dust with powdered sugar if desired. Serve warm!

- You can use any type of sausage, such as turkey sausage or chicken sausage, for a lighter option.
