Ingredients

4 boneless, skinless chicken breasts

1 lb baby potatoes, halved

1 cup cherry tomatoes

1 small red onion, sliced

3 tbsp balsamic vinegar

2 tbsp lemon juice

1 tsp lemon zest

3 cloves garlic, minced

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a bowl, mix balsamic vinegar, olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
