Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 lb baby potatoes, halved

  • 1 cup cherry tomatoes

  • 1 small red onion, sliced

  • 3 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 1 tbsp fresh parsley, chopped


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a bowl, mix balsamic vinegar, olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.

  • Toss chicken and potatoes in the marinade, then arrange on the baking sheet.

  • Bake for 20 minutes, then add cherry tomatoes and red onion. Bake for another 10 minutes until chicken is cooked through and potatoes are golden.

  • Garnish with parsley and serve.
