- 2 tbsp olive oil
- 3 tbsp melted butter
- 3 garlic cloves, minced
- 1 tbsp lemon juice
- Zest of 1 lemon
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 1 cup baby potatoes, halved
- 1 cup broccoli florets
- Lemon slices (for garnish)
Instructions
- Preheat Oven:
- Preheat oven to 400°F (200°C).
- Prepare the Salmon:
- In a bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, thyme, parsley, salt, and pepper.
- Place salmon fillets on a sheet pan and brush them with the lemon garlic butter mixture.
- Prepare the Veggies:
- Toss halved baby potatoes and broccoli with a little olive oil, salt, and pepper.
- Arrange them around the salmon on the sheet pan.
- Bake:
- Bake for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork.
- Serve:
- Garnish with lemon slices and serve immediately.

- Add asparagus or green beans for extra veggies.
- For crispier potatoes, pre-bake them for 10 minutes before adding the salmon.
