  • 4 salmon fillets
  • 2 tbsp olive oil
  • 3 tbsp melted butter
  • 3 garlic cloves, minced
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 cup baby potatoes, halved
  • 1 cup broccoli florets
  • Lemon slices (for garnish)

Instructions

  • Preheat Oven:
    • Preheat oven to 400°F (200°C).
  • Prepare the Salmon:
    • In a bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, thyme, parsley, salt, and pepper.
    • Place salmon fillets on a sheet pan and brush them with the lemon garlic butter mixture.
  • Prepare the Veggies:
    • Toss halved baby potatoes and broccoli with a little olive oil, salt, and pepper.
    • Arrange them around the salmon on the sheet pan.
  • Bake:
