Ingredients
- 1 ½ lbs beef stew meat (or sirloin, cut into chunks)
- 1 ½ lbs baby potatoes, halved
- 4 tbsp butter, melted
- 4 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- ½ cup beef broth
- 1 tbsp Worcestershire sauce
- ¼ cup Parmesan cheese, grated (optional)
- Fresh parsley, chopped (for garnish)
Instructions
1️⃣ Sear the Beef (Optional, but Recommended)
- Heat olive oil in a skillet over medium-high heat.
- Sear the beef bites for 2-3 minutes on each side until browned. (This step adds more flavor!)
2️⃣ Prepare the Slow Cooker
- Place the halved baby potatoes at the bottom of the slow cooker.
- Add the seared beef bites on top.
3️⃣ Make the Garlic Butter Sauce
- In a small bowl, mix together the melted butter, minced garlic, onion powder, paprika, red pepper flakes, Italian seasoning, salt, and pepper.
- Pour this mixture over the beef and potatoes.
4️⃣ Slow Cook
- Pour in the beef broth and Worcestershire sauce.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are cooked through.
