Tender, juicy beef bites are slow-cooked with garlic butter, herbs, and baby potatoes for the perfect comfort food dish. It’s a set-it-and-forget-it meal, making dinner easy and stress-free!

Ingredients

Scale
  • 1 ½ lbs beef stew meat (or sirloin, cut into chunks)
  • 1 ½ lbs baby potatoes, halved
  • 4 tbsp butter, melted
  • 4 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • ¼ cup Parmesan cheese, grated (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1️⃣ Sear the Beef (Optional, but Recommended)

  • Heat olive oil in a skillet over medium-high heat.
  • Sear the beef bites for 2-3 minutes on each side until browned. (This step adds more flavor!)

2️⃣ Prepare the Slow Cooker

  • Place the halved baby potatoes at the bottom of the slow cooker.
  • Add the seared beef bites on top.

3️⃣ Make the Garlic Butter Sauce

  • In a small bowl, mix together the melted butter, minced garlic, onion powder, paprika, red pepper flakes, Italian seasoning, salt, and pepper.
  • Pour this mixture over the beef and potatoes.

4️⃣ Slow Cook

  • Pour in the beef broth and Worcestershire sauce.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are cooked through.

5️⃣ Finish and Serve

  • Sprinkle with Parmesan cheese (if using) and chopped parsley before serving.
  • Enjoy with a side of steamed veggies, crusty bread, or a fresh salad!

Notes

✔️ Searing the beef first helps lock in flavor, but if you’re short on time, you can skip this step.
✔️ For a richer taste, substitute beef broth with red wine for a deeper, more savory flavor.
✔️ Make it a complete meal by adding carrots, mushrooms, or green beans to the slow cooker.
✔️ Leftovers? Store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
