Ingredients

  • 4 bone-in, skin-on chicken thighs

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp dried thyme

  • 2 tbsp olive oil

  • Salt and pepper, to taste


Instructions

  • Season chicken with salt, pepper, paprika, and thyme.

  • In a large skillet, heat olive oil over medium heat. Brown the chicken on both sides (about 3–4 minutes per side), then remove and set aside.

  • In the same skillet, sauté onion and garlic until softened.

  • Stir in the rice, then pour in the chicken broth and bring to a simmer.

  • Nestle the chicken back into the skillet. Cover and reduce heat to low.

  • Simmer for 25–30 minutes, or until the rice is tender and the chicken is cooked through.

  • Let rest for 5 minutes before serving.

Notes

  • For extra richness, swap half the broth with cream or milk.

  • Add peas or chopped carrots for more veggies and color.
