4 bone-in, skin-on chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 small onion, finely chopped

Salt and pepper, to taste
Instructions

Season chicken with salt, pepper, paprika, and thyme.

In a large skillet, heat olive oil over medium heat. Brown the chicken on both sides (about 3–4 minutes per side), then remove and set aside.

In the same skillet, sauté onion and garlic until softened.
