These Spinach and Feta Quesadillas are a tasty, healthier twist on the classic quesadilla. With creamy feta cheese and vibrant spinach, they’re quick to make and packed with flavor – perfect for lunch or a light dinner!


Ingredients

  • 4 flour tortillas (8-inch)

  • 1 tablespoon of olive oil

  • 2 cups of fresh spinach, chopped

  • 1/2 cup of feta cheese, crumbled

  • 1/2 cup of shredded mozzarella cheese

  • 1 small red onion, finely chopped

  • 1 clove of garlic, minced

  • 1/4 teaspoon of dried oregano

  • Salt and pepper, to taste

  • Sour cream and salsa, for serving (optional)


Instructions

  • Sauté the spinach:

    • Heat the olive oil in a large pan over medium heat.

    • Add the onion and garlic, cooking for 2-3 minutes until softened.

    • Add the spinach, cooking until wilted (about 2 minutes). Season with oregano, salt, and pepper. Remove from heat and set aside.

  • Assemble the quesadillas:

    • Place a tortilla in a clean skillet over medium heat.

    • Sprinkle a small handful of mozzarella cheese and feta cheese on one half of the tortilla.

    • Add a few spoonfuls of the spinach mixture on top of the cheese.

    • Fold the tortilla in half to cover the filling, creating a half-moon shape.

  • Cook the quesadillas:

    • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

    • Repeat with the remaining tortillas and filling.

  • Serve:

    • Slice the quesadillas into wedges and serve with sour cream and salsa, if desired.

Notes

  • You can add other vegetables like mushrooms or peppers for extra flavor.

  • For a spicier version, add a dash of red pepper flakes or jalapeños.
