These Spinach and Feta Quesadillas are a tasty, healthier twist on the classic quesadilla. With creamy feta cheese and vibrant spinach, they’re quick to make and packed with flavor – perfect for lunch or a light dinner!
Ingredients

4 flour tortillas (8-inch)

1 tablespoon of olive oil

2 cups of fresh spinach, chopped

1/2 cup of feta cheese, crumbled

1/2 cup of shredded mozzarella cheese

1 small red onion, finely chopped

1 clove of garlic, minced
-
1/4 teaspoon of dried oregano

Salt and pepper, to taste

Sour cream and salsa, for serving (optional)
Instructions

Sauté the spinach:

Heat the olive oil in a large pan over medium heat.

Add the onion and garlic, cooking for 2-3 minutes until softened.

Add the spinach, cooking until wilted (about 2 minutes). Season with oregano, salt, and pepper. Remove from heat and set aside.

Assemble the quesadillas:

Place a tortilla in a clean skillet over medium heat.

Sprinkle a small handful of mozzarella cheese and feta cheese on one half of the tortilla.

Add a few spoonfuls of the spinach mixture on top of the cheese.

Fold the tortilla in half to cover the filling, creating a half-moon shape.

Cook the quesadillas:

Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Repeat with the remaining tortillas and filling.

Slice the quesadillas into wedges and serve with sour cream and salsa, if desired.
