Description

This creamy, cheesy Spinach Chicken Casserole is a comforting and easy-to-make dish. Packed with tender chicken, fresh spinach, cream cheese, and gooey mozzarella, it’s the perfect weeknight meal that’s low-carb and utterly delicious.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 cups fresh spinach leaves (or 1 cup frozen spinach, thawed and drained)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Chicken:
    • Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Arrange them in the prepared baking dish.
  3. Prepare the Creamy Mixture:
    • In a mixing bowl, combine the softened cream cheese, sour cream, and 1/4 cup of the mozzarella cheese. Mix until smooth.
  4. Assemble the Casserole:
    • Spread the fresh spinach evenly over the chicken breasts. Spoon the cream cheese mixture on top, spreading it evenly to cover the spinach.
    • Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  5. Bake the Casserole:
    • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is bubbly and golden.
  6. Serve and Enjoy:
    • Remove from the oven and let rest for 5 minutes before serving. Pair with a fresh salad, rice, or roasted vegetables for a complete meal.

Notes

  • Substitute fresh spinach with frozen spinach for convenience—just make sure to squeeze out the excess liquid.
  • For added flavor, sprinkle a bit of crushed red pepper flakes on top before serving.
  • You can make this dish ahead of time and refrigerate it; simply bake when ready to serve.
