A Flavorful and Elegant Salmon Dish with Spinach and Feta
These stuffed salmon pinwheels are filled with a savory spinach and feta mixture, rolled up and baked to perfection. It’s a beautiful and flavorful dish that’s perfect for a special dinner or a family meal.
Ingredients

4 skinless salmon fillets (about 6 oz each)

1 tbsp olive oil

2 cups fresh spinach, chopped

1/2 cup crumbled feta cheese

2 garlic cloves, minced

1/4 tsp dried oregano

Salt and pepper, to taste

1 tbsp lemon juice

Fresh parsley, chopped, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Lay the salmon fillets flat on a cutting board. Use a sharp knife to carefully cut them horizontally, creating a pocket in the center of each fillet, without cutting all the way through.

Heat olive oil in a skillet over medium heat. Add chopped spinach and sauté for 2-3 minutes until wilted.

Remove from heat and stir in crumbled feta cheese, minced garlic, dried oregano, salt, and pepper.

Spoon the spinach and feta mixture evenly into the center of each salmon fillet pocket, pressing gently to pack it in.

Carefully roll up the salmon fillets to form pinwheels and secure with toothpicks if needed.

Place the stuffed salmon pinwheels on a baking sheet lined with parchment paper. Drizzle with lemon juice.

Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish with fresh parsley and serve immediately.
