Ingredients
- 12 oz (340g) pasta (spaghetti or linguine)
- 1 lb (450g) shrimp, peeled and deveined
- 3 cups fresh spinach leaves
- 2 cups cherry tomatoes, halved
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
Cook Pasta: Boil pasta in salted water according to package instructions. Reserve 1/2 cup pasta water, then drain.
Sauté Shrimp: Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
Make the Sauce: In the same skillet, add remaining olive oil, garlic, and red pepper flakes. Sauté until fragrant. Add cherry tomatoes and cook for 3-4 minutes until softened.
Combine: Stir in spinach and cook until wilted. Return shrimp to the skillet and toss with the sauce.
Mix with Pasta: Add the cooked pasta to the skillet, toss well, and add reserved pasta water as needed for a silky sauce.
Serve: Top with Parmesan cheese if desired, and serve warm.
